Cranberry yogurt bread

Preparation of dough ingredients: 200g high gluten flour, 30g low gluten flour, 40g fine sugar, 3g salt, 2.5g high sugar resistant yeast, 35g whole egg liquid, 40g yogurt, 85ml milk, 20g butter.

Preparation of bread filling ingredients: an appropriate amount of dried cranberries and condensed milk. Surface decoration: An appropriate amount of whole egg liquid.

Production method:

Mix all ingredients except butter and knead until a smooth dough is formed. After kneading the dough until it is thick, add butter and continue kneading until a thin layer of film can be pulled out. If you have a bread maker at home, you can use it to mix noodles, which will save time and effort. Cover the kneaded dough with cling film, place it in a warm place for basic fermentation, ferment to twice the size, and stick your fingers to the flour to poke holes without collapsing or rebounding.


After the dough has fermented, take it out and press it to release air. Then wrap it in baking paper and put it in the refrigerator to freeze and let it relax for 15 minutes. The dough will harden but can still be rolled out. Take out the loose dough and roll it into large pieces. Brush a layer of condensed milk and add an appropriate amount of chopped dried cranberries. Fold both sides towards the middle 1/3 and roll it out. Fold up and down towards the middle 1/3. After folding, roll it into square pieces and cut them into appropriate sized squares according to your preferences.


Put the cut cubes directly on a baking tray, ferment in a warm and moist environment to twice the size, and then brush the surface with a thin layer of whole egg mixture. If you like almond slices, you can sprinkle a layer on the surface, but if you don't like them, you can skip it. Preheat the oven, put it in the middle layer of the oven and bake it over high and low heat for 10 minutes before it can be taken out of the oven!


Yogurt should be solidified and thick. The sugar content in the dough is relatively high, and if you don't like it too sweet, you can reduce it appropriately. Cranberries can be replaced with other similar materials such as honey beans. Putting it in the refrigerator for freezing is for the convenience of rolling, without affecting the taste and later production.
